Cut into bite-sized chunks.

8 pieces of pepper sausages or 2 butifarras, also cut into small pieces.

Cut the chicken breasts into small cubes.

Preparation of ingredients
Before starting a paella, you must prepare the ingredients that will make it up!
- Clean and cut the vegetables.
- Grate the tomatoes to create a crushed tomato base.
- Rincez les fruits de mer.
- Cut the meats and seafood (if necessary) to have uniform pieces.
- Clean the mussels by removing the byssus (or beard).
Cooking the ingredients
Each food must be cooked separately to fully enjoy its flavors. This is a central step in cooking paella! The goal is to brown the ingredients with olive oil. The cooking juices will then give the paella a delicious flavor.
- Fry the pork pieces in olive oil until they are lightly browned. Then, place them in a bowl.
- Fry the chicken. Then, put it in the bowl.
- Fry the sausages, then remove them.
- Lightly fry the shrimp and langoustines on both sides for a few seconds. Place them in a new container.
- Open the mussels and clams. Collect the water they released in a container. Then set them aside.
- Sauté the vegetables, one by one, and add them to the bowl.
- Sauté the finely chopped onions, and when they are lightly cooked, add the pieces of squid and cuttlefish rings. Let everything cook until the onion is slightly golden. Then, add the crushed tomato pulp and stir-fry everything well. You have just prepared the “sofrito”.
All ingredients end up in the bowl except for the shrimp and langoustines. We will add them when there are 5 minutes left to cook the rice.
Cooking rice
Check the rice cooking time on the package. Generally, it takes 20 minutes to cook the rice thoroughly.
- Place all the ingredients from the bowl into the pan.
- Add 2 handfuls of rice per person. Then, pour in the remaining water from cooking the clams and mussels. Add more water to cover the paella ingredients.
- When there are 5 minutes left to cook the rice, add the shrimp and langoustines. Let them cook for the final 5 minutes.
