Ingredients for 10 people
Squids ≈ 750 g
Squid is a member of the seafood family. It is appreciated for its tasty and delicate flesh.
Mussels ≈ 600 g
A seafood paella without mussels would be a crime 😉
Shrimp and prawns 1 or 2 pieces per person
You can do 50/50 between shrimp and prawns, or use only shrimp or only prawns.
Langoustines 1 piece per person
We buy one langoustine per person, so everyone will have a piece on their plate.
Onions 2 to 4 pieces
Fish suquet between 2 and 3 l
It's a broth made from fish, shellfish, and tomatoes. If you want to make it with fresh fish and seafood, consider purchasing them accordingly.
Valencian rice 20 handles
You should use Valencian PDO rice, or Bomba or Albufera rice. It should be round and small. Allow two handfuls per person, which is roughly equivalent to 1 kg of rice.
TOMATOES 2 or 3 pieces
We will grate the tomatoes to obtain a base of crushed tomatoes.
SAFFRON 30 brins
Saffron is the most expensive spice in the world. It is also called red gold! You need 2 pinches of saffron.
Olive oil
It's impossible to make paella without olive oil! Any other type of vegetable oil is prohibited!
Salt & pepper

Preparation of ingredients
Before starting a paella, you must prepare the ingredients that will make it up!
- Clean and chop the onions.
- Rinse and grate the tomatoes to obtain a tomato base.
- Clean and cut the squid. Remember to remove the skin to keep it tender and tasty after cooking.
- Clean the mussels by removing the beards.
- Rinse the langoustines, shrimps and prawns.
Preparing fish suquet
Fish stock, also known as fish stock in French, is a broth made from various fish and shellfish. It can be made with fresh fish and seafood, or with fish stock. Please note that the ingredients listed here are not part of the established list.
- Add a little olive oil to a pot. Then start cooking an onion.
- Add fresh fish and seafood. You can add a little paprika for extra flavor.
- Pour in the required liters of water. Add the fish stock if you don’t have fresh fish.
- Let it boil for at least several minutes.
- Pass everything through a sieve to keep only the broth.
Cooking the ingredients
Now the paella preparation begins!
- Heat olive oil in the paella pan.
- Brown the squid with the onions. Don’t forget to season. Set aside.
- Start cooking the shrimp, prawns, and langoustines. Set them aside.
- Add the tomato pulp.
- Add the rice and let it brown a little. Add paprika if desired.
- Pour in the fish suquet. You need about twice as much broth as rice. Add the saffron and mussels. Check the seasoning of your broth.
- Let the rice cook for about 20 minutes. It is cooked over high heat first. Reduce the heat slightly after 12 minutes. Then, turn on the high heat for the last time.
Rest time
When the rice is cooked, turn off the heat and let the paella rest for a few minutes. You can cover it with aluminum foil. This will help finish cooking the rice if it is not completely cooked in any spots.
Other ingredients
Seafood paella can be made with a variety of fish and shellfish. Some use monkfish, cuttlefish, swordfish, slipper lobster, cockles, or clams.
