Valencian rice 20 handles
You should use Valencian PDO rice, or Bomba or Albufera rice. It should be round and small. Allow two handfuls per person. This is roughly equivalent to 1 kg of rice in this recipe.

It's a broth made from fish, shellfish, and tomatoes. If you want to make it with fresh fish and seafood, consider purchasing them accordingly.

Preparation of ingredients
Before starting a paella, you must prepare the ingredients that will make it up!
- Clean and chop the onions.
- Clean and slice the garlic.
- Clean and grate the tomatoes to create a crushed tomato base.
- Clean the cuttlefish and collect the ink sacs.
- Clean and cut the squid. Remember to remove the skin to keep it tender and tasty after cooking.
- Clean any other fish or seafood.
Fish suquet
Fish suquet, also known as fish stock in French, is a broth made from various fish and shellfish. It can be made with fresh fish and seafood, or with fish stock.
- Heat a little olive oil in a pot and then start cooking an onion.
- Add fresh fish and seafood to brown.
- Pour in the required liters of water. Add the fish stock if you don’t have fresh fish.
- Let it boil for at least 30 minutes.
- Pass everything through a sieve to keep only the suquet.
Cooking
Now the paella preparation begins!
- Brown the cuttlefish in the paella pan using olive oil. Don’t forget to season.
- Add the second onion and the thinly sliced garlic.
- Wait a few minutes then add the tomato pulp.
- Add the rice and fry it with the squid ink for a few minutes.
- Pour in the fish suquet.
- Let the rice cook for about 20 minutes. Check the rice producer’s recommended cooking time. It is listed on the rice package.
Rest time
When you think the rice is cooked, turn off the heat and let the paella rest for a few minutes. You can cover it with aluminum foil. This will help finish cooking the rice if it is not completely cooked in any spots.

Black rice paella can be served with aioli.
