Its cooking is more complicated than it looks. Selecting the right ingredients, creating a flavorful broth, and strictly following the steps for cooking the rice are essential skills to master.   <\/p>\n\n<h2 class=\"wp-block-heading\">Selecting the Ingredients<\/h2>\n\n<p>Before choosing the ingredients, you must decide on your paella recipe. Will it be mixed, composed only of seafood, or follow the typical Valencian recipe? <\/p>\n\n<p><br\/>Then, it&#8217;s time to focus on selecting and purchasing the ingredients. The choice of ingredients is made by considering their quality, freshness, seasonality, origin, price, and their ability to create interesting flavors and textures. <\/p>\n\n<p>For a paella, if possible, opt for fresh products. There is a specific cooking order for the ingredients. Follow the suggested steps meticulously, and remember to set some ingredients aside to prevent overcooking.  <\/p>\n\n<h2 class=\"wp-block-heading\">Creating a Good Broth<\/h2>\n\n<p>In Spain, the broth is called el caldo. If your broth isn&#8217;t successful, your rice won&#8217;t have the best flavors.<br\/> <\/p>\n\n<p>The broth is prepared separately in a specific container or directly in the paella pan. When preparing the broth, the rice is not present; it&#8217;s added later in the process.  <\/p>\n\n<p>You make it over high heat. The goal is to reduce the broth and allow its flavors to fully develop. Generally, you keep it on high heat for a long time\u2014at least 20 minutes. The broth is already ready, so there are no further steps to follow for it. Always prepare a little more broth than necessary just in case your rice is undercooked.   <\/p>\n\n<p>If, on the other hand, you want to make the broth directly in the pan, we suggest you first add the necessary amount of water for the rice to cook. Identify a reference point that determines the height of this amount of liquid. Many cooks use the rivets of the paella pan handles as a reference point. Then, add the extra amount of water needed for your broth preparation. Start cooking the broth. As soon as your reference point is reached (meaning the excess water has evaporated), it&#8217;s time to add the rice and start cooking it.     <\/p>\n\n<h3 class=\"wp-block-heading\">Successfully Cooking the Rice<\/h3>\n\n<p>Rice cooking is done in four distinct stages during which the heat intensity changes.<\/p>\n\n<h4 class=\"wp-block-heading\">Stage 1: High Heat at Rice Introduction<\/h4>\n\n<p>Once the broth is ready, pour in the necessary rice. It will be invisible, as it sinks to the bottom of the pan and is covered by the broth. Start with a high heat for approximately 6 to 8 minutes. During these minutes, only the rice soaks in the broth. You only introduce the first ingredients at the end of the high heat stage. It&#8217;s time to reduce the heat to a low flame. Adjust your wood fire accordingly or reduce the gas burner power. This stage should last until the end of the rice cooking. Allow about 6 to 8 minutes again. Taste the rice at the end of this stage and check that the broth has been fully absorbed.     <\/p>\n\n<p>Several situations may arise at the end of this stage:<\/p>\n\n<ol class=\"wp-block-list\">\n<li>If your rice is cooked, and there is no more broth, move on to the next stage.<\/li>\n\n\n\n<li>If your rice is cooked and it is starting to stick to the bottom of the pan, and there is no more broth, move on to Stage 3.<\/li>\n\n\n\n<li>If there is still broth, regardless of the rice&#8217;s doneness, keep the heat on and wait for the rice to absorb it.<\/li>\n\n\n\n<li>If there is no more broth, and the rice is not cooked at all, add a little extra broth to finish cooking.<\/li>\n\n\n\n<li>If there is no more broth, and the rice is almost cooked, you will finish cooking it by covering the paella at the end of Stage 4.<\/li>\n<\/ol>\n\n<figure class=\"wp-block-image alignwide size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"640\" height=\"470\" src=\"https:\/\/mi-paella.com\/wp-content\/uploads\/2025\/02\/paella-moules.jpg\" alt=\"Arranging the mussels in the paella\" class=\"wp-image-2457\" srcset=\"https:\/\/mi-paella.com\/wp-content\/uploads\/2025\/02\/paella-moules.jpg 640w, https:\/\/mi-paella.com\/wp-content\/uploads\/2025\/02\/paella-moules-500x367.jpg 500w, https:\/\/mi-paella.com\/wp-content\/uploads\/2025\/02\/paella-moules-300x220.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/figure>\n\n<h4 class=\"wp-block-heading\">Stage 3: High Heat to Create the Socarrat<\/h4>\n\n<p>This step is not always necessary. It depends on the doneness of your rice in Stage 2. You need to check if the rice has started to stick to the bottom of your pan to create the socarrat. The socarrat is the crust of rice that lines the bottom of the paella. If no crust has started to form, raise the heat power for a brief minute. Be careful to control the high heat to prevent the rice from burning. If the crust has already started to form in Stage 2, skip to Stage 4. If you restart high heat, you will burn the socarrat.       <\/p>\n\n<h4 class=\"wp-block-heading\">Stage 4: Turn Off the Heat and Resting Time<\/h4>\n\n<p>Turn off the heat and allow a resting time of several minutes before enjoying your paella. If your rice is perfectly cooked, leave the dish uncovered. If, on the contrary, the rice is slightly undercooked, cover the paella with pieces of aluminum foil.
