Several stories attempt to trace its invention. It is generally attributed to a fisherman, who was also a cook in his spare time at sea, who replaced the traditional rice with fideu\u00e1 noodles in his paella.  <\/p>\n\n<h2 class=\"wp-block-heading\">The Origins of Fideu\u00e1<\/h2>\n\n<p><strong>The word &#8220;fideu\u00e1&#8221; means &#8220;large quantity of noodles&#8221; in the Valencian dialect.<\/strong> The Valencian language is a Romance language, very similar to Catalan (which is itself very close to Occitan, a French regional language). It is recognized and spoken in the Valencian Community in Spain, where it coexists with Castilian. <\/p>\n\n<p><strong>&#8220;Fideua&#8221; therefore defines the very characteristics of this dish: a large quantity of prepared noodles.<\/strong> The origins of the dish are quite controversial. <strong>It is said that fideu\u00e1 was born from a concoction prepared by a cook on a fishing boat located in the port city of Gandia. Wanting to prepare a traditional paella but not having any rice, he replaced the rice with pasta. <\/strong> And fideu\u00e1 was born!<\/p>\n\n<p>The story is not verifiable and should therefore be interpreted more as storytelling! What is certain is that it originated in the Spanish Valencian country! <\/p>\n\n<h2 class=\"wp-block-heading\">Preparing Fideu\u00e1<\/h2>\n\n<p><strong>The preparation of a fideu\u00e1 is very similar to that of a paella. The ingredients are very close and the cooking method is almost identical. <\/strong><\/p>\n\n<p>To cook a fideu\u00e1, you need:<\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong>noodles <\/strong>(which look like vermicelli but are not),<\/li>\n\n\n\n<li><strong>monkfish<\/strong>, the only fish present in a fideu\u00e1<\/li>\n\n\n\n<li><strong>different crustaceans<\/strong>: prawns, cuttlefish, langoustines, mussels, etc.<\/li>\n\n\n\n<li><strong>an excellent rock fish broth<\/strong> (a suquet de peix)<\/li>\n<\/ul>\n\n<p>It is prepared in a paella pan (or paellera), which is the Spanish name for a paella pan. The preparation is very similar to that of a paella, although some details are different. These noodles can vary in thickness and size from one brand to another. <\/strong> Elles ont des num\u00e9ros allant de 0 \u00e0 5 permettant de les cat\u00e9goriser en fonction de leur taille. Elles existent aussi en version courb\u00e9e, ressemblant \u00e0 des coquillettes. Les cuisiniers choisissent souvent les fideos de cat\u00e9gorie 4 ou de cat\u00e9gorie 3. It exclusively contains crustaceans and fish. Even the broth is a fish <em>suquet<\/em>. However, a recipe is not set in stone. You can adapt it according to your tastes!    <\/p>\n\n<h2 class=\"wp-block-heading\">What wine to drink with a fideu\u00e1?<\/h2>\n\n<p>Fideu\u00e1 is composed only of fish and crustaceans. You might think that a fideu\u00e1-white wine pairing is appropriate. However, <strong>the best food-and-wine pairings for a fideu\u00e1 lean towards red and ros\u00e9 wines.<\/strong>  <\/p>\n\n<h3 class=\"wp-block-heading\">Red Wines<\/h3>\n\n<p>Many Spanish red wines can accompany your fideu\u00e1. Rioja reds (Spain) are a very good choice, as are Bierzo (Spain) . In France, you can go for a Saint-Chinian (Languedoc, France), a C\u00f4tes-du-Rh\u00f4ne (Rh\u00f4ne Valley, France), a Pic-Saint-Loup (Languedoc, France), or a C\u00f4te-du-Roussillon (French Catalonia, France), for example. You can look at ros\u00e9s from Costi\u00e8res de N\u00eemes (Languedoc, France), a Corbi\u00e8res ros\u00e9 (Languedoc, France), a Patrimonio (Corsica, France), or a Provence ros\u00e9 (Provence, France).
