There are several types of DO-certified Valencian rice, which we&#8217;ll explore in this article.  <\/p>\n\n\n\n<h2>What varieties of rice are used in a paella?<\/h2>\n<p>You must use round rice. The rice of Valencia benefits from a <em>Denominaci\u00f3n de Origen<\/em> (DO), which is the equivalent of the French AOC (Appellation d&#8217;Origine Contr\u00f4l\u00e9e). Today, three varieties of rice are grouped under this DO. They are Senia, Bomba, and Albufera rice.
